Michelle Bernstein Recipe – Yogurt Marinated Chicken and Quinoa Tabouli Recipes

You gotta love those recipes that are often shared at the end of the show.  Today (March 5, 2012) Michelle Bernstein (Celebrity Chef from the Food Network) joined Dr. Oz to share her Yogurt Marinated Chicken and Quinoa Tibouli recipes..  Also be sure to peruse Dr Oz Crock Pot Recipes that he shared on a prior show.  Crockpots are a wonderful and “lazy” way to make a meal that can last all week!

The recipe today that really got my interest was the Yogurt Marinated Chicken Recipe.. Since I first started following Dr. Oz I noticed at how many recipe’s used plain greek yogurt as a healthy alternative ingredient.  I have tried a few recipes that use yogurt and let me tell you, they are delicious!  Then again, I love yogurt, so maybe I’m partial.  If you do use yogurt in your recipe and have any tips to share, please share them in our new “Fans of Dr Oz” Forum.  We would love to try them and meet new friends at the same time.

Michelle Bernstein Yogurt Marinated Chicken Recipe

Dr Oz - Yogurt Marinade Chicken and Quinoa Tibouli Recipes

Ingredients :

  • 2 skinless chicken breasts (boneless) – Cut the chicken breasts in half so they are one half to one quarter inch thickness.  Cuts calories and is cheaper as well
  • 2 tablespoons of olive oil
  • Salt
  • Pepper
  • 1 tablespoon of honey
  • 8 ounces of yogurt
  • Marinade
  • Pinch of cumin
  • lime juice (squeezed from one lime)
  • One teaspoon of chopped jalapeno’s
  • 1/2 teaspoon of kosher salt

Directions :

  • Mix marinade ingredients (set aside 1/2 cup)
  • Put marinade into a plastic bag
  • Place the chicken pieces in a bag of marinade ingredients over night.
  • Remove chicken from Marinade
  • Heat grill pan over medium heat
  • Add olive oil
  • Season chicken breasts
  • Cook the chicken breasts until golden brown (4 to 5 minutes)

Quinoa Tabouli Recipe

Ingredients :

  • One cup rinse and drained quinoa
  • 1 cup of kale – remove the center and slice
  • one half cup of fresh chopped Italian parsley
  • 1/4 cup freshly chopped mint
  • 1/4 cup scallions
  • 1/2 cup of quarter inch diced tomatoes
  • 3 tablespoon extra virgin olive oil
  • Squeeze the juice of one lemon
  • season to taste with salt, pepper (or your favorite seasonings)

Directions :

  • Cook quinoa using the directions on the package
  • Place in the refrigerator
  • Mix the ingredients
  • Season to taste
